Currently, In ver 1.2 each char has his her bag slots . I know in ver 2.0 chars will share one inventory bag... that sounds great ..
I've had many instances where im running in the dungeon and i get a chest and all my chars bags are full ...i have to drop the item that i really wanted to pick up . Is there any fix to this in ver 2.0 ?

Will there be a fix to stats over 100 not displaying in ver 2.0 ?

Will chars will stats over 100 even port properly to ver 2.0 ?

I currently have a level 79 Elf Sam with 92 dex .... im scared to push him over 100 dex in case this isnt addressed...

Yes, to a limited degree. You can pick up an item even if it exceeds the number that you would normally be able to carry into the dungeon (i.e. 16 times the number of characters in your party), however you can never have more than a total of 800 items in the game, and you will not be able to pick up any beyond that.

Note that in 1.x the issue is a display problem only. Your dex can go over 100 with no problem, it just doesn't display correctly.
